To repeat, do not expect to get instantaneous readings every time.
To actually affect the sensor, you must essentially warm the entire phone, or blow air into the phone sideways, as the sensor is actually inside the phone case.

Just what it sounds like.
The only thing to be aware of is that the temperature sensor does not continuously sample the temperature. In fact, it may not update for minutes at-a-time, due to lack of temperature change.
That is why the timer is in the upper-right corner, so you have an idea of how "old" the data is.
